FERMENTED WHITE
IN BARREL
PREPARATION:
Harvest manually, selected and staggered of the two white grape varieties. Elaborations of each variety separately. Vatting of the destemmed grapes and cold maceration for 2 days in intelligent stainless steel tanks. Bleeding of the first quality free run juice and initial fermentation at a controlled temperature of 13-15oC and then alcoholic fermentation of the Chardonnay in barrels and in new French oak foudres and the White Tempranillo in American oak barrels with soft toasted wood. Followed by aging in the same barrels with fine lees for 7 months. Daily battonage of the barrels during the first two months of aging. Blending of the two wines at the end of their aging.
Selection of high quality oak wood. Bottled in June 2022.
TASTING:
Color: Golden yellow with metallic sheen and greenish reflections. Aroma: Very expressive and complex. Symphony of aromas of passion fruit, mango, peach, ripe pineapple, citrus, pear, banana, wrapped in pleasant notes of pastry, vanilla, biscuit, under a floral background. Intense, fine and elegant nose. Mouth: With a sweet entrance it is voluminous, unctuous, with great and very refreshing acidity. Very good balance and harmony. It has a quince scented aftertaste. Very persistent, fine and long finish. Delicious, tasty, tasty.

PROCESSING:
This wine has been made after selecting the best grapes from our vineyards, harvested at their optimum ripeness moment, after controlled fermentation rests for a minimum of 12 months in French oak barrels and American, complementing its aging with 6 months in the bottle.
Wine made with the Tempranillo and Maturana varieties. The fermentation process is carried out at a controlled temperature, carrying out several pump-overs and racking to enhance its aromatic and color sensations. After spending 12 months in American and French oak barrels, it has been bottled for maturation.
CATA:
Color Rojo Cereza, con tonos tejas, cubierto. Aroma de frutos rojos y sensaciones de vainilla y especias muy personal El paso en boca es intenso, untuoso, con un final largo y persistente.

MATURANA
PREPARATION:
Wine made with the red Maturana variety, from “La Piconada” vineyard planted in 2008 and cultivated in trellis with double cordon, located in the town of Anguciana, where the winery is also located, just 3 km from the “Barrio de la Estación” (Haro).
The terrain is clay-ferrous with boulder.
It is fermented in stainless steel tanks at 24 oC after a gentle ageing on its lees, aged for 12 months in French and American oak barrels.
TASTING:
Color: intense, cherry red, preserving purple.
The sncet is appreciated the vegetable tones of herbs without becoming piracinic, typical of the variety, accompanied by the notes of wood.
In the mouth it is balanced with a very well integrated acidity and round tannins that give it a unique personality.
